The Tuber Magnatum Pico, or the fine white truffle, is the most precious of all from a food point of view. Sought after by chefs all over the world for its intense, but delicate scent, it is characterized by a golden zest, sometimes tending to ochre and a very irregular, slightly flattened shape. The gleba has marbled shades ranging from pale yellow to red or even hazelnut, depending on the trees at which it grows. The size normally varies from a walnut to that of a large orange. It generally has an irregular shape, but in the presence of brittle soils its appearance is regular and smooth and takes on greater commercial value. Buy by the ounce or pound, up to 10 lbs.
